The toast to the avocado is all the rage, and even though it is true that this modern and healthy menu contains healthy fats, folic acid, protein, phytonutrients and important trace elements base, there are many ways to non-avocado super food your standard breakfast routine.
Toast with avocado is a great option for breakfast as the fruits are easy to taste without cooking; they are ridiculously versatile. (Mix them with lime or add miso or yogurt! Sprinkle with salt and pepper!) But you probably have more fruits and vegetables in your fridge and pantry ready for a toast.
Some of our favorite toast alternatives to the avocado require a little preparation. For example, roasted mushroom toasts are great but require a little stir fry. But, we promise that as winter arrives and perfect avocados become harder to find, these sweet and salty options will fill your belly without taking up a lot of time.
So, toast a slice of your favorite bread and take a look at your pantry. Here are some recipes for some of our favorite non-avocado toasts:
PUMPKIN CREAM WITH APPLES AND PEPITAS
2 tablespoons pumpkin puree + 1 tablespoon Greek yogurt + cinnamon + 1/4 sliced apple + 1 tablespoon grilled pumpkin seeds
Mix pumpkin, yogurt and cinnamon. Spread on the toast and add the apple and pepitas. Sprinkle with salt to taste.
ROAST MUSHROOM, FETA & LEMON
1/4 cup sliced mushrooms + 1/4 cup feta + olive oil fillet + black pepper + ground red pepper + lemon zest
Sauté the mushrooms gently in a drizzle of olive oil until they are fragrant. Mix the feta, a dash of olive oil, black pepper and cracked red pepper. Spread the feta on toast, garnish with mushrooms and a pinch of lemon zest.
RADES AND SUNFLOWER SUNFLOWER
3-4 sliced radishes + handful of sunflower or alfalfa sprouts + hummus + salt and pepper
Spread the hummus over the toast, garnish with sliced radishes and sprouts. Sprinkle with salt and pepper to taste.
RICOTTA WITH FIGS AND SPICES
1/4 cup ricotta + lemon + figs + honey + cinnamon + nutmeg
Whisk together ricotta and a drizzle of honey, cinnamon and nutmeg to taste. Spread on toast. Slice the figs and arrange on the top of the ricotta. Sprinkle with a little honey.
